The 2024 SC Watermelon Queen Kinlyn Hinson visits us at "Making It Grow" to share a watermelon recipe while also giving lots of nutritious facts about watermelons. She also talks about growing up on her family’s sixth generation farm, Hinson Farms.
Ingredients
- 2 cups finely diced seedless watermelon, red and yellow
- 2 jalapeno peppers seeded and diced, or to taste
- ¼ cup red onion finely chopped
- ¼ cup cilantro finely chopped
- 2 tablespoons of lime juice
- Salt and pepper to taste
Directions
- Into a large bowl, dump the watermelon, followed by jalapeno peppers, red onion and cilantro. Mix gently.
- Add lime juice and salt and pepper and mix again.
- Serve with tortilla chips.
