Clemson Extension Agent Amanda McNulty shows her cousin, Leda Jackson, how to make Charlotte Russe, a cherished Charleston Christmas tradition. Serves about 8. Make ahead of time and serve cold.
Ingredients
- 1 bottle of good quality cream sherry
- Lady finger cookies of a quantity to complete recipe
- 1 packet Knox unflavored gelatin
- ¼ cup milk
- 1 pint heavy whipping cream
- 2/3 cup of granulated sugar divided
- 5 egg whites from pasteurized eggs
- ¼ teaspoon cream of tartar
Directions
- Make or purchase lady fingers
- Pour sherry into a bowl and dip each lady finger into the sherry, soaking on both sides.
- Arrange each dunked lady finger into a decorative bowl, starting at the bottom of the bowl, working upwards and outwards, lining the bowl with the cookies.
- Pour milk into saucepan and place over low heat
- Put packet of unflavored gelatin into milk to dissolve, stirring carefully. Do not let the milk boil.
- Into the bowl of a stand mixer, pour the heavy whipping cream. Add most, but not all of the sugar into the whipping cream and put the mixer on low, then medium to beat the cream and sugar. When mixture has stiffened, with the mixer once more on low, slowly add the gelatin that had been dissolved into the milk, as well as ½ cup of sherry. Increase the beater speed to medium and continue to whip until thickened.
- Remove the bowl from the stand mixer, and using a different, completely clean bowl and a spotlessly clean and dry beater, beat 5 egg whites until frothy. Add the cream of tartar, and increasing the speed of the beaters, add the remaining granulated sugar to the egg whites. When the whites are stiff, carefully fold them into the heavy cream mixture and then pour all into the ladyfinger lined bowl. Refrigerate for several hours or, for best results, overnight.
- Will keep for several days in the refrigerator.
