How to Make a Healthy Poke Bowl

Note: When making the fish-based poke bowl, use only fresh, sushi restaurant grade fish for this recipe.

Ingredients

  • Rice either brown or white for the number to be served. Prepare according to directions on package
  • Fish either salmon or tuna
  • Pineapple
  • Carrot
  • Low sodium soy sauce
  • Rice vinegar
  • Sesame oil
  • Sesame seeds
  • Edamame
  • Red cabbage
  • Red peppers
  • Lemon or lime juice (optional)
  • Black and white sesame seeds
  • Ginger
  • Seaweed salad
  • Cooked, seasoned and marinated beets (ginger, soy sauce and honey)
  • Corn
  • Carrots
  • Tomatoes
  • Avocado (optional)
  • Mango (optional)
  • Siracha sauce (optional)
  • Diced Jalapeno pepper (optional)
  • Seasoned and marinated beets (ginger, soy sauce and honey)

Directions

  1. Prepare either brown or white rice.
  2. Arrange a buffet of the toppings for the rice such that diners can assemble their own poke bowl.
  3. One soup or salad bowl for each diner.
  4. Buy fresh fish, either salmon or tuna and keep refrigerated until needed. 
  5. Cut the fish into cubes and marinate in a mix of low sodium soy sauce, rice vinegar and sesame oil for 10 minutes. Top with sprinkling of black and white sesame seeds for flavor and color.
  6. Put about a cup of rice in the bottom of each serving bowl
  7. Keeping colors separate, add edamame, red peppers, red cabbage and any of the other ingredients you want to add. Put the serving of fish in the center of the bowl, surrounded by the vegetables.
  8. For a vegetarian topping, cook, season and marinate cubes of red beet. Top with a sprinkling of sesame seeds and mix.
