Cooking Healthy (2010) | Connections

Old-fashioned Southern recipes are a way of life when it comes to good eating in the Lowcountry of South Carolina.

This show features "Chef Fatback” cooking in a studio with Host P.A. Bennett. He shows Ms. Bennett how to prepare signature dishes like stone ground grits, spicy smoked sausage with onion and green peppers, and Lowcountry gravy, and emphasizes healthy eating in the preparation of Southern food.

Foods prepared include shrimp and grits, collard green sandwiches, and entrees famous in the Lowcountry of South Carolina. At the time of the interview, "Chef Fatback” was a well-known chef at Mac’s on Main, in downtown Columbia. The recipes are shown on screen, along with his recipe for Group Therapy Chili with Beans.

Another restaurant featured in this show is Allouette’s Café located in Charleston. The restaurant features Holistic Soul Food. Known for promoting consciousness in cooking, owner Allouette Jones-Smalls says she is totally aware of being hands-on with her food. She talks about preparing food in season and connecting with local grower John Fields of John’s Island.

Her specialty is fresh collard green sandwiches using whole grain bread. Connections goes behind the scenes as she prepares this popular Southern dish.
