How to make Southern Style Mac and Cheese | Backroad Bites

Ester Williams makes a Southern style mac and cheese. Williams works at Miller's Bread Basket located in Blackville, South Carolina. 

Ingredients

  • 16 ounces of macaroni of your choice. Cook macaroni using directions on the box.
  • 1 stick of unsalted butter
  • Cooking spray
  • 1/4 teaspoon nutmeg (optional)
  • 5 cups of shredded cheese, divided
  • 1 teaspoon powdered mustard
  • ½ cup flour
  • 4 cups of milk, preferably whole milk.
  • Pot for boiling water for macaroni 
  • Large pan or Dutch oven for making cheese sauce
  • Casserole or loaf pans of your choice

Directions

  • Spray your casserole, or loaf pans with cooking spray.
  • Heat oven to 350 degrees F. 
  • Boil water in a pot sized to accommodate the amount of macaroni you are going to cook.
  • Put macaroni into boiling water and take off heat. Allow to sit in boiling water for 7 to 10 minutes.  Drain and set aside. The noodles will swell as you make the cheese sauce. This helps keep the noodles from overcooking before they go into the oven.
  • Put stick of butter in a large pan or Dutch oven.
  • Add flour and stir to make a roux and add powdered mustard and nutmeg if using.
  • Next add milk and stir until creamy.
  • Add 4 of the 5 cups of shredded cheese. Mix well.
  • Mix the macaroni into the cheese sauce and pour into either casserole or loaf pan(s).
  • Top with extra 1 cup of cheese.
  • Bake for 40 minutes or until it reaches a temperature of 145-150 degrees.
