How to make Midlands Peach Gazpacho | Backroad Bites

Ingredients

  • 1 32-ounce bottle of V-8 juice
  • ½ cup diced red pepper
  • ¼ cup diced orange pepper
  • 1 large tomato diced 
  • 1 medium peach diced
  • 1 seedless cucumber diced
  • 5 ounces of a can of  mandarin oranges for sweetness
  • ¼ large red onion minced
  • 1-2 tablespoon red wine vinegar
  • 1 tablespoon minced cilantro
  • 1 or 2 cloves of garlic minced
  • 3 tablespoons of black and white sesame seeds, toasted
  • ¼ cup of red onion minced
  • Squeeze of half a lime
  • Salt and pepper to taste

Directions

  1. Into a large bowl, add the diced fruit, vegetables and seasonings. 
  2. Tip in the V-8 juice and mix to combine. Ladle into bowls to serve.
