Chef Brandon Velie makes a Midlands Peach Gazpacho. Chef Velie owns Juniper located in Ridge Spring, South Carolina. Interested in learning more about Chef Velie? Check out this episode of Original SC. Gazpacho is a cold Spanish soup and is very refreshing in the hot South Carolina summers.
Ingredients
- 1 32-ounce bottle of V-8 juice
- ½ cup diced red pepper
- ¼ cup diced orange pepper
- 1 large tomato diced
- 1 medium peach diced
- 1 seedless cucumber diced
- 5 ounces of a can of mandarin oranges for sweetness
- ¼ large red onion minced
- 1-2 tablespoon red wine vinegar
- 1 tablespoon minced cilantro
- 1 or 2 cloves of garlic minced
- 3 tablespoons of black and white sesame seeds, toasted
- ¼ cup of red onion minced
- Squeeze of half a lime
- Salt and pepper to taste
Directions
- Into a large bowl, add the diced fruit, vegetables and seasonings.
- Tip in the V-8 juice and mix to combine. Ladle into bowls to serve.
