Emery Tumbleston of Champney's Blueberry Farm in Ravenel, SC brings in some fresh blueberries off the farm and shows us at "Making It Grow" how to make an easy and tasty cobbler!
Ingredients
- 9 x 13 inch baking pan, disposable is good idea with blueberries as the jammy fruit can be hard to clean up.
- Cooking/baking spray
- Flour (optional)
- 2 cups of blueberries
- 1 20 ounce can crushed pineapple in its own juices
- 1 box lemon cake mix
- One stick of butter sliced thinly
Directions
- Preheat Oven to 350 degrees
- Grease pan thoroughly with cooking spray
- Dust with flour (optional)
- Put cleaned and drained blueberries into the pan
- Top with can of crushed pineapple and smooth over with a spatula
- Sprinkle over a box of lemon cake mix, making sure to cover the blueberry and pineapple mixture. You can use your hands to press the cake mix into the fruit.
- Put thin slices of the butter all over the top of the cake.
- Bake cake in oven for about 40 minutes or until golden brown.
- Allow to cool before serving as the blueberries will be hot and bubbling.
