Watermelon Bruschetta with Ansley Still | Making It Grow

In this featured segment on Making It Grow, Ansly Still, 2023 South Carolina Watermelon Queen, talks to Amanda McNulty about locally grown watermelon and shares her recipe for watermelon bruschetta. 

 

Ingredients  

  • 2 cups of watermelon chopped in ½ to ¾ inch pieces 

  • 1 teaspoon dry rosemary 

  • ½ teaspoon salt and pepper 

  • ¼ cup feta cheese  

  • 1 tablespoon olive oil 

  • crackers or toast of your choice 

 

Directions 

  1. Into a large bowl, mix the chopped watermelon with the rosemary, salt, pepper, and feta cheese. 

  2. Gently stir in the olive oil to combine. 

  3. Spoon some of the mixture onto a cracker or toast. Enjoy!
