McLeod Farms Strawberry Recipes | Making It Grow

Clemson Extension Agent and Host of "Making It Grow" Amanda McNulty chats with Gaie McLeod of McLeod Farms about their strawberries and four of their favorite strawberry recipes.

Stuffed Strawberries

Ingredients

  • Filling: 8 oz cream cheese. 
  • 1 1/2 cups powdered sugar. 
  • 6 tablespoons butter. 

Directions

  1. To prepare strawberries, cut off caps and scoop out a small amount. 
  2. Cut the tip flat so the strawberry will stand upright. 
  3. Cream filling ingredients together. 
  4. Put mixture in piping bag or zip lock bag with a hole in the corner.
  5.  Fill strawberries and chill.

Chocolate Covered Strawberries

Ingredients

  • Melting Chocolate
  • Strawberries
  • Microwave safe bowl
  • Toothpicks

Directions

  1. Melt the chocolate according to directions on package
  2. Insert toothpick into strawberry and dip into chocolate sauce

Strawberry Spinach Salad

Ingredients

  • 1 cup strawberries, halved
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 1 bag of freshly washed and drained baby spinach
  • ¼ cup toasted slivered almonds
  • ¼ cup feta cheese

 ​Directions

  1.  Blend the strawberry halves in a blender until smooth.
  2.  Turn the blender on low and add each remaining ingredient one at a time until the dressing is smooth and all ingredients are incorporated.
  3.   Place spinach in a bowl and top with almond slices and feta, drizzle with salad dressing and toss to mix. 
  4.  Store remaining dressing in a mason jar in the refrigerator. Use on other salads or to drizzle over bread.

Strawberry Jello

Ingredients

  • 2 packages of strawberry Jello
  • 2 tablespoons of lemon juice
  • 1 banana thinly sliced
  • 3 cups cleaned and sliced strawberries
  • 1 20-ounce can crushed pineapple with juices. Buy pineapple packed in its natural juices.
  • 2 cups boiling water
  • Ring type Jello mold sized to accommodate ingredients
  • 1 large style glass plate for serving or plate of your choice

Directions

  1. Boil water
  2. Pour water will Jello into bowl and mix. When Jello has dissolved, add in the thinly sliced banana, strawberries, lemon juice,  and pineapple with its juices. Stir well and refrigerate until set. Unmold Jello mold onto serving plate. Fill center with whipped cream.
