In this Making It Grow studio demonstration, Vicky Bertagnolli opens her family cookbook and create a dish using fresh South Carolina ingredients. Creamed Kale will be on the menu!
Ingredients
1 bunch of kale (Serves 3 adults)
1 pint of heavy cream
1 pinch each of salt and pepper
Pinch of nutmeg (optional)
Directions
Rinse the kale in lukewarm water and then rinse it in cold water two more times to remove the grit.
Pinch off the leaves from the thick midrib.
Into a large pot that has been set at medium heat, add the rinsed kale. You will hear a slight sizzle from the water remaining on the leaves after the rinse.
Add the heavy cream and the salt and pepper.
Using tongs, stir the ingredients in the pot. Do not let the cream boil.
Add a pinch of nutmeg if you wish.
Watch carefully and when the kale appears wilted but still bright green, you are ready to serve.
